Loyal to our principles of highlighting the special characteristics and advantages of the olive oil produced in the Sitia region of Crete, relying on decades of experience and high technical know-how, we created the unique product Theion Elaion , for which we selected olive groves with special characteristics:

Olive groves located in the Sitia Geopark, mountainous and semi-mountainous, dryland and irrigated, cared for so that the entire crown of the trees is illuminated, with rich wind potential and a microclimate and soil that gives the olive fruit superior quality characteristics.

The producers who cultivate these olive groves, people with love for what they do but also with a special sensitivity for the environment and respect for the human being have for many years cultivated exclusively with the organic farming method.

The company Biokalliergitis Sitias S.A. provided an agronomist who supported the growers with site visits, monitoring and advice throughout the olive growing season, winter cultivation operations, flowering, fruiting, fruit development and ripening as well as the optimal time to harvest in order to to produce the best olive fruit that each region could produce with the given weather conditions as they occur each time.

For the milling of the harvested olives, the baton of quality passed to the company's own oil mill, which grinds exclusively organic olives with cold extraction (cold pressing) in a two-phase process.

The selection of the olive groves, the cultivation techniques and the oiling in the biphasic olive mill were done with the aim of producing a unique organic olive oil of top quality with excellent organoleptic characteristics and a rich phenolic content.

The organic olive oil produced in this way is offered to you with the characteristic freshness of the unripe fruit and the pleasant sensation of the "koroneiki" variety, balanced, slightly bitter and moderately spicy with a long-lasting greener aftertaste reminiscent of freshly cut grass with a complexity of aromas and harmony .

Each bottle under traceability has a unique tracking number that traces back to the field. While the choice of materials was made with high standards of product protection beyond aesthetics.
